i love islander food, i wish i could cook like them, But everytime I try a recipe it doesnt quite taste exactly the same or my expectations are too high.

  1. They are an Indian Flat bread.

  2. Caribbean or Islander rotis differ slightly from Indian rotis.  

    They often are made using either yeast, baking powder or sometimes both. The recipes you may be trying may be  for Indian style rotis, try a recipe from Trinidad:

    TRINIDAD:  roti types

    Sada Roti: Similar to naan. It is cooked on a tava, therefore the bottom is not crisp like that of a naan. Because it is the easiest one to make, it is the most commonly consumed roti in Trinidad. It is a popular breakfast option in Trinidad, in combination with tomato choka, baigan choka (eggplant), and other vegetable dishes.

    Paratha Roti: A roti made with butter, usually ghee. It is cooked on a tava. Oil is rubbed on both sides, then it is fried. This gives the roti a crisp outside. When it almost finished cooking, the cook begins to beat the roti while it is on the tava, causing it to crumble. It is also called 'Buss-Up-Shut' in Trinidad.

    Dosti Roti: A roti where two layers are rolled out together and cooked on the tava. It is also rubbed with oil while cooking. It is called dosti roti because the word dosti means friendship in Hindi. This type of roti is eaten in Guyana with a special halva when a child is born.

    Dhalpuri: A roti with a stuffing of ground yellow split peas, cumin (geera), garlic, and pepper. The split peas are boiled until they are al dente and then ground in a mill. The cumin is toasted until black and also ground. The stuffing is pushed into the roti dough, and sealed. When rolled flat, the filling is distributed within the roti. It is cooked on the tava and rubbed with oil for ease of cooking. This is the most popular roti. Another version of this is aloo puri, which is made from potatoes.

    I tried this the first time I made it and had no problems. I learned some stuff on the way just from doing it so much.

    Like don't cook them for more than 30 seconds on each side or else when they cool, they turn like chips..really hard. and I found the measurement of water not right. use 1 cup of water to any type of flour you want. I use whole wheat. You don't want any oil of any type in your pan

  4. I miss roti.  I used to go to one in the Lauderhill Mall in Lauderhill, FL.  I would always would get a conch roti and sorrell juice.

  5. Roti is a flat bread that can be found in various regions of the world.

    Each regions have their own "style" or approach to making roti.  Also roti is eaten different in from place to place.

    Roti in the Caribbean is most often eaten with curries or stews.  The curry or stew can either be stuffed inside the roti bread and be eaten sort of like a pita.  Or the roti can be broken into pieces and dipped into the curry sauce or stew.  

    Caribbean roti you will often find in Trinidad or Guyana.  Both Trinidad and Guyana have their own methods of cooking roti also.  Other places in the Caribbean that eat roti on a regular basis include St. Vincent, Surinam, and Grenada.

    Roti in India and the surrounding areas are also eaten with mostly stews.  However here they are hardly made into a pita like sandwich.  Instead people usually dip their roti into the sauces and eat it.

    Places like Malaysia and Thailand have their own versions of roti too.  Instead of eating them as meals with curry or stew, the Thai and Malaysians make miniture shaped rotis and eat them as dessert snacks dipped with condensed milk.

  6. I make roti at home everyday. If you've ever tried naan, it's a flatter, healthier version. It's dough or atta is 2 parts flour to 1 part water with a little bit of oil. It is then made on a griddle, then put over a open flame. Try looking on You-Tube under the words 'how to make a roti'. There are very nice tutorials

  7. Most people only know the word "Roti" to be the Indian whole wheat like bread similar to Naan, but in the West indies a roti is a large wrap with either chicken, goat, lamb or veggies in a curry based sauce rolled into a tortilla shaped sandwich.

    Here in Toronto, Canada I regularly eat them, we have several good Jamaican or Trini based roti shops, it is a bit of a trick to get the curry right and some palces will sell the roti skins but there are recipes to make them, I have and used my 10" tortilla press to squeeze the flour dough with the slpit pea dough inot a large round, but a good fresh flour tortilla is as good alternative.

    You curry is important, I prefer goat or boneless chicken even a veggie one, just have to watch the hot sauce when ordering.
