After every game, you get an trophy(sometimes not)- and you also get ranked on how you played. To get an star ranking you schould play really good. Like, You need to be first all the time. Every Lap you need to be first. Also, check this video out- it shows you a person getting 3 star ranking----

i got the star so listsen in grand pix on every single race u have to get 1 star ranking on 50cc 100cc 150cc mirror class IT TAKES AGES.i nearly got two stars intstead of one

You get a 1 star ranking if you always get first place.  You get 2 or 3 whenever you're really ahead of everyone else, you avoid traps, and you always get first place.

I think it has more to do with how far ahead you are than your actual ranking, you just have to play through the circuit and come in first, and do well to get a star ranking.
