What is turkish delight made from - (not the Frys chocolate stuff)

My son has just come back from holiday in Turkey - & bought me back some turkish delight from the market. It's delicious - but what is it?

  1. Turkish delight 2 ingredients

    3 T Unflavored gelatin

    1⁄2 c Cold water

    1⁄3 c Boiling water

    2 c Sugar

    4 T Extract *

    Food coloring **

    1⁄4 c Pistachio Nuts, Chopped

    1 c Confectioners' sugar

    Cooking Turkish delight 2

    1. * extract: may use orange, lemon or raspberry extract.

    2. ** food coloring: use appropriate color to match flavor.

    3. Soften gelatine in cold water.

    4. Add sugar to boiling water.

    5. Bring to boil.

    6. Stiri in softened gelatine.

    7. Simmeri, uncovered, 20 minutes.

    8. Add flavoring and coloring.

    9. Pour into ungreased, 8-inch square pan. Add nuts.

    10. Stir gently.

    11. Chill.

    12. When firm, invert onto cutting board.

    13. Cut into 1 ½ inch cubes.

    14. Roll in confectioners" sugar.

    15. Store in a jar at room temperature.

    16. Serve with greek coffee.

  3. i think sugar, gelatin and rose flavouring features in the main but i'm not sure about the rest.

  4. Proper Turkish Delight if made right, has NO!! gelatin, it is a mix of water, sugar corn syrup or glucose, and thickened with a starch, most times potato or tapioca. Once set it is cut, rolled in powdered sugar to keep it from drying and shrinking.

    In Turkey the shop make 10-12 different one ranging from fruit flavoured ones, to those with nuts like pistachios, almonds and pinenuts, essences like rose water, orange flower water, rosemary, lemon.

    I t is a sign of respect and is a gift that a Turkish household will readily accept and thank you for, noting your generosity.
