depends on what type of equipment the cafe has. "Typical"- Espresso, deli, and soft drinks. So knowing how to use the espresso machine and how to make the drinks; deli, making sandwiches and knowing the proper food handling requirements. soft drinks, if it is old fashion then the proper amount of carbonation and syrup, if not then just running the machine. hope this helped
