  1. I am a former chef and the first person is right, but it depends on the restaurant, in most they do what he has said, but in more formal or upscale one's, they many also serve the bread and rolls, reset tables, put on new linens and cloth serviettes, remove dishes from tables for customers.

    In most places they only clear and maybe reset empty tables, while they do not take orders or serve food, they assist the wait staff with customer question, and if they are inclined may be training to be a service waiter/waitress.


  2. He is a joe boy.  A "BUS BOY".   He clears off the dirty dishes on the tables.

  3. A busser in a restaurant clears the tables and takes the dishes to the dishwasher.
