With a "spring seat?" What does this mean?

Because you mentioned "spring seat", which I think you mean "Spring Tree", you're talking about English saddles.  A Spring Tree means that the saddle tree has some give to it and makes it both more comfortable for the horse and the rider.

A combination saddle is what they refer to as an "All Purpose" saddle, not specifically made for one discipline but will work limitedly for most.  It will work for jumping, flat and some dressage, it won't really work for saddle seat though.
