What is a food item called "yuzu"?

I saw this on a menu: Cheesecake with Yuzu sauce. The waitress didn't describe it very well.

  1. The yuzu is a citrus fruit originating in East Asia. It is believed to be a hybrid of sour mandarin and Ichang papeda. The fruit looks a bit like a very small grapefruit with an uneven skin, and can be either yellow or green depending on the degree of ripeness.

Ever one has a point, when I was a chef and worked in Japan, we got it fresh in season, preserved in vinegar or salted just the peel, in ponzu sauce for sashimi, dried in a powdery form, it is like a sour orange with a lemony overtone and a bit tart like it has a drop or 2 of vinegar in it, we would use it in alot of things, at the Hotel I worked at it was in salad dressing, the ponzu at the Japanese restaurant (they made there own dipping sauce), we even used the juice in Hollandaise sauce for fish on occasion.

    It is very versitile and a nice change from regular lemon or orange juice but my previous flavour combo is a good way to substitute for it.
