  1. Hi Kayla,

Try this .... LEFSA Norwegian Potato Bread

3 cups of fresh mashed potatoes

    1/4 c. butter

    1 tsp. salt

    1 cup milk

    1 cup flour

Butter & brown sugar to taste

Melt butter and salt in 1 cup boiling water.

Pour mixture over potatoes and stir.

Add 1 cup of milk and 1 cup of flour; stir together

    Cool in the refrigerator.

Roll into golf ball size balls, then roll out thin.

Fry in lightly oiled thick based skillet

    Brown lightly on both sides.

Roll up with butter and a little brown sugar inside.

Ideal for breakfast, salads and with oily fish

    Bon Appetite

    CoffeeBean

  2. poached cod fish, i prefer vegetable stock for poaching but any kind of broth works, or stewed tomatoes, you want to bring the liquid to gentle boil in a skillet, med heat, add what you like to it ie... onion, bay leaf, salt, pepper, lemon, and the fish fillets, if you turn it over be careful or it will fall apart, fish is done when white and flakes easily with fork

  3. My advice is not to make a norwegian dish for her. She's an exchange student therefore you should make something local. After all she's been having norwegian food all her life, I'm sure she would like to try something different.
