  1. Buy those cake mixes that come in a box. Its very easy to do : )

  2. buy a box of cake mix

    my favorite is funfetti

  3. Happy Birthday!

This chocolate cake is very easy and delicious and I've never met a person that didn't love it!

    heat oven to 350

splurge and buy yourself a blue can of the Crisco with Pillsbury flour to coat your pan(s)

    1 cup butter (room temperature)

    2 1/4 cups of sugar

    2 eggs

    1 teaspoon vanilla

2 3/4 cups unsifted cake flour

    1/2 cup unsweetened cocoa

    2 teaspoons baking soda

    1 teaspoon salt

    2 cups buttermilk

cream your butter and sugar in your new stand mixer then add the eggs 1 at a time - this will become light and fluffy - love those stand mixers!

mix the dry ingredients together and then add to your creamed butter-sugar-eggs at a slower speed or you will wear the flour

do 1/3 flour mixture -1 cup buttermilk - 1/3 flour mixture - 1 cup buttermilk - 1/3 flour mixture   my Gram said start with flour/end with flour but a good cake always has buttermilk

stop mixing - scrape the bowl/sides and bottom - add your vanilla then mix at medium speed for 1 minute

if you have 3 round 8 or 9 inch pans you can use them and bake for 30 minutes or a 13 X 9 for 40 minutes

watch them closely the first time - everyones oven is different - when the cake starts to pull away from the pan shut the oven off - you can check the cakes with a toothpick if you want

let them sit for 2 to 3 minutes in the pan before putting them on cake racks to cool  -  do not frost before they are cool or the frosting will melt

    icing

    9 Tablespoons butter (room temperature)

    1/2 cup cocoa

    4 cups powdered sugar

    8-9 Tablespoons milk

    1 1/2 teaspoons vanilla

mix the powdered sugar and cocoa together in the mixing bowl and try to get all the lumps out - put the rest of the ingredients in then mix everything together

stop the mixer and scrape the sides and bottom of the bowl

mix on high until the icing is thick and creamy (love that stand mixer)

You will impress everyone with this cake!
