What is a good computer program to study for a stay at home mom?

What computer program would you recommend for a mom who hasn't been to school in 10 years but enjoys computers? Specifically these programs: http://www.nscc.edu/depart/cis/conc.html

Are these kind of 2 year applied programs meant for adult beginners?

I'd do the Systems Analyst or Web Developer.  Each of the programs would assume that you already have basic computer skills such as facility with some software and so on, but I think each would expect you to be a beginner in those topics.
