What is a good dish to take to new parents?

My friend and her husband just had their first baby one week ago. We are going to visit them tomorrow and would like to bring them some food. Any suggestions/recipes? She is trying to breastfeed, so maybe something that would have good nutrition for that but would freeze or reheat well.

  1. A dish that will keep in the fridge for days, that is fresh, full of vegetables and highly nutritious is a big pasta salad.  Here it is:  one pkg bow tie pasta, cooked and rinsed; one can quartered artichoke hearts, one can sliced olives, a couple hands full of baby spinach, cut up a little; one box of grape tomatoes, one red, yellow, or orange bell pepper cut up, two stocks of celery sliced, one small red onion diced and virtually any other vegetable.  Even meat (hard salami is nice) and cheese (cubed cheddar?) can be added for a little extra protein.  Toss with olive oil and white balsamic vinegar or a bottled Italian dressing.  Add salt and pepper to taste.  This recipe has a thousand different permutations.  Have fun with it.

    Enjoy the baby... they do grow up quickly.

    Ingredients

    0 flour

    1 1/2 cups water, cold

    1 tablespoon oil

    1 tablespoon vinegar

    1/2 teaspoon salt

    butter, melted

    2 cups spinach, cut thin (dock or sorrel) or dock or sorrel, cut thin

    salt

    1/2-1 cup yogurt or feta cheese, crumbled

    2-3 eggs

    butter, melted

    Directions

    1Prepare the dough with flour, 1 and a half cups of cold water, 1 spoon of oil, 1 spoon of vinegar and half a teaspoon of salt, so that the dough may obtain average solidity.

    2Press and mix the dough well, then divide in two equally sized pieces. Then divide the pieces into 10-12 ball shaped pieces.

    3Spread the balls in well-shaped circles of the size of a plate. Place the circle-shaped dough on top of one another so as to obtain two large pies.

    4Cover each pie with melted butter and leave for about half an hour to 1 hour.

    5During this time wash a bowl of spinach, dock or sorrel, cut thin, add salt and leave in salt for about 15-20 minutes, then squash.

    6Mix the spinach, dock or sorrel with half to 1 cup yogurt and 2-3 eggs.

    7You can replace the yogurt with crumbled feta cheese. Cover the baking pan with melted butter.

    8Spread one of the dough pies to cover the entire pan and gently pull up the ends, then sprinkle melted butter on it and spread the spinach on it uniformly.

    9Spread the second dough pie on top of the spinach.

    10Cut the byrek in square slices, sprinkle with melted butter and place in a hot oven until cooked.

    11Byrek is served hot accompanied with yogurt.  

  3. Nothing spicy!!!  She's breastfeeding a baby for crying out loud.  Spices will give the poor baby burning urine!  

    Make something you can throw in the microwave and ready to eat.  A salad such as tuna salad or ham salad or chicken salad for sandwiches might be nice, too.  Include a loaf of fresh bread in case they haven't gone shopping in a while.  

  4. Southwest Chicken Chili. -- really easy

    2 chicken b*****s

    1 can Mexican corn

    4 cans chili beans

    1 can tomato sauce

    2 packets of chili seasoning

    Bake chicken b*****s in oven at 350 degrees for 1 hour.

    30 minutes into the baking, place beans, corn and chili mix into saucepan.

    Simmer on low for remaining 30 minutes.

    When chicken is done (juices run clear), place in seperate bowl and shred.

    Add chicken to saucepan ingredients.

    Continue simmering on low for 10 minutes.

    Serve with crackers or rice

    Creamy Alfredo Sauce

    1- 8 ounces Cream Cheese

    3/4 Cup Fresh Grated Parmesean

    1/2 Cup Butter

    1/2 Cup Milk

    Heat in a saucepan until smooth. Serve over your favorite pasta or use as a dipping sauce for toasted french bread. I've successfully substituted half-and-half or skim milk for the milk. And sometimes I add a little olive oil in place of some of the butter. This is so thick and creamy.

    Ground Beef pie::

    1 pound ground beef

    1/2 teaspoon salt

    1/4 teaspoon pepper

    1 cup shredded Cheddar cheese

    2 eggs, beaten

    1 1/2 cups milk

    3/4 cup biscuit baking mix

    In a skillet, cook beef over medium heat until no longer pink; drain. Press into an ungreased 9-in. pie plate. Sprinkle with salt, pepper and cheese. In a bowl, combine the eggs, milk and biscuit mix just until combined. Pour over cheese. Bake at 400 degrees F for 35 minutes or until a toothpick inserted near the center comes out clean.

  6. CHICKEN ENCHILADAS  

    6 chicken b*****s, cooked, cut into 1" pieces

    1 onion

    2 tbsp. butter

    2 16 oz cans Old El Paso Enchilada sauce

    1 4 oz can tomato sauce

    16 white corn tortillas

    2 c. cheddar cheese, combined with 2 c. Monterey Jack cheese

    1 chicken bouillon cube (in 1/4 cup liquid)

    1 c. stewed tomatoes

    1 tsp. garlic powder

    1 tsp. dried basil

    1 tsp. dried oregano

    1/2 tsp. chili powder

    Slice the onion and saute in garlic and butter. Add the dissolved bouillon cube, tomatoes, Enchilada sauce, herbs and seasonings. Simmer over low heat.

    Fry the tortillas in 375 degree oil for a short period (about 1 minute).

    Remove tortillas and drain on paper towels. Dip in sauce when cooled.

    Fill each with chicken and cheese and roll up, placing seam side down in 9 x 13 x 2 inch pan.

    Pour remaining sauce on top and sprinkle with cheese.

    Bake at 350 degrees for 30 to 40 minutes.

  7. A beef, chicken, or tukey pot pie would be good. Load it with veggies.The nutrients will be god for her and the baby and the protien will work well for her as well. Pot pie is also a kind of comfortt food, for me at least.

    A meat loaf also with lots of veggies n there would be good, then eithr add pre frozen green beans or blanched veggies of choice, with ashed potatoes, and freeze the gravy seperate in a ziplock freezer bag to either microwave or boil.

    Lasgana would also be good. If your not sure what veggies your friends like then just shredd carrots, zuccini etc into the sasuce and they wont even know they are there, yet it will be packed with extra veggies.

    A shepards pie is easy and so is stew. You can freeze it in heavy ziplock baggies. Thaw in the the fridge and reheat in the microwave or on the stove.

  9. Usually casseroles are easy to make and taste great when reheated, and anyone who doesn't have milk allergies likes them. I would avoid anything too spicy or with broccoli or beans. Foods that are gassy in nature (I know this sounds dumb but...) can give the baby gas and that's uncomfortable. New parents are sleep deprived and the last thing they need is more help in that department!

  10. I don't know from experience, but I just read that milk is key for breastfeeders. Sounds logical, right? For some reason, apricots are supposed to be good, too. Perhaps bring a couple along with a gallon of milk, jar of peanut butter, and a loaf of whole wheat bread? Snacks seem to be critical since sitting for a meal is virtually impossible for new parents.

    I baked a lasagna for a couple of friends, skipping the Italian sausage and opting for ground turkey. Bringing it in storage containers will be appreciated by your friends, too. No need to bring it in a fancy serving dish.

    I made chicken and noodles for my neighbor. I did not put pepper on it since she wasn't sure about the spices for baby. It had only a little milk, but the chicken was important for her diet.

  11. I don't know about freezing this but with the heat of summer i've been eating lots of fresh veggie salads.  My favorite one this year is a cucumber tomato salad.  It's super easy to make.  Here's the recipe along with a picture.  Good luck!
