  1. Jamaican Jerk Dry Rub

        *   1/8 teaspoon allspice

        * 1 teaspoon salt

        * 3/4 teaspoon garlic powder

        * 1/2 teaspoon white sugar

        * 1/8 teaspoon chipotle chile powder

        * 1/8 teaspoon ground cloves

        * 1/8 teaspoon dried thyme leaves

        * 1/4 teaspoon ground black pepper

        * 1/2 teaspoon cayenne pepper

        * 1/8 teaspoon ground cinnamon

       1.   Place allspice, salt, garlic powder, sugar, chipotle powder, cloves, thyme, black pepper, cayenne pepper, and cinnamon into a very large bowl. Mix together until well blended. Store in airtight containers.

       2. To use, rub spice mix onto the meat of your choice, about 1 1/2 teaspoons per serving. For best results, marinate for at least an hour to allow the flavors of the rub to penetrate the meat.

    All-Purpose Dry Rub

    Ingredients

    ¼ cup dark brown sugar

    ½ cup white sugar

    1/3 cup garlic salt

    1/3 cup kosher salt

    1 teaspoon cayenne pepper

    1 teaspoon black pepper

    ¼ cup paprika

    1 tablespoon chili powder

    1 teaspoon dried oregano

    1 teaspoon ground cumin

    Instructions

    1. Mix together all ingredients and store in a sealed jar.
