What is a good estimate to have an engine installed into a 69 mustang

It depends.What engine are you talking about?

If it is your engine, then just choose the most reputible shop and pay the hourly rate.  If you need to know a price ask them for a 'not to exceed' quote.

If you need them to supply an engine, many shops have a dedicated engine supplier and they will have many options for you (i.e used vs. rebuilt and price with or without core ).  

Finally there are the national chains, like Necco.  They have a pretty much flat rate 2500 for a remanufactured engine with installation but that usually is after core charge.
