  1. APPLE AND CINNAMON PANCAKES  

    1 1/2 cups apple juice

    2 eggs, beaten

    1 cup flour

    1/2 cup quick oats

    2 tablespoons wheat germ

    1 1/2 tablespoons baking powder

    1 tablespoons grated orange peel

    1/2 teaspoon cinnamon

    2 tablespoons powdered sugar

    1 banana, sliced

    Beat together apple juice and eggs in a medium bowl. Add the flour, oats, wheat germ, baking powder, orange peel and cinnamon. Stir until well mixed.

    Lightly grease a nonstick skillet. Make as you would pancakes pouring approximately 2 tablespoons batter mixture onto hot skillet for each pancake. Flip (only once) when bubbles begin to form around edges.

    Serve with powdered sugar and banana slices.

    CHOCOLATE PANCAKES  

    2 cups flour

    3 teaspoons baking powder

    1/2 teaspoon salt

    1 cup sugar (less may be used, to taste)

    1 cup milk

    4 teaspoon butter, melted

    2 eggs

    4-6 teaspoons cocoa

    Combine dry ingredients. Add remaining ingredients and stir only until mixed.

    These freeze well and can be reheated in the microwave for a quick breakfast.

    Sauce (frosting):

    1/2 cup butter, melted

    1 1/2 cups powdered sugar

    1 teaspoon vanilla

    Mix well. Spread on hot pancakes.

    GERMAN PANCAKES  

    1 tablespoon butter

    1/2 cup milk

    1/2 cup flour

    2 eggs

    dash salt

    dash cinnamon

    Preheat oven to 425 degrees. While oven is preheating, melt 1 tablespoon butter in 9-inch square pan by putting it in the preheating oven.

    In large bowl, using a wire whisk, beat together: 1/2 cup milk 1/2 cup flour 2 eggs dash salt dash cinnamon

    Pour batter into 9-inch square pan that has the melted butter. Put it back in the oven.

    Bake for 12-15 minutes.

    Serve with powdered sugar or syrup. (Some people like to put lemon juice on it as well as the powdered sugar.)

  2. Good old fashioned pancakes

    1 1/2 cups all-purpose flour

    3 1/2 teaspoons baking powder

    1 teaspoon salt

    1 tablespoon white sugar

    1 1/4 cups milk

    1 egg

    3 tablespoons butter, melted

    In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

    Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

  3. I've made many a pancake in my day, but I think the best are the Bisquick Melt-In-Your-Mouth Classic with lemon juice, baking powder, and sugar (recipe is right on the box).  Fluffy and delicious every time.
