    Saute 1lb of beef in a large pan with high sides, add 1 whole onion chopped, and a few minced garlic cloves, cook unitll tender, add 1 can of green salsa, red kidney beans and 1 can of beer ( I use coors) and if you don't like beer you can use chicken broth. let all your flavors simmer together, then I like to crunch up tortillia chips put the chilie over the chips and top with sour cream

    super yummy and filling!

    Bisquick Cheeseburger Pie  

    Easy to make casserole of ground beef and cheese baked with a topping made of bisquik.

    Ingredients:

    1 lb ground beef

    1 c. chopped onion

    1/2 tsp salt

    1 c. cheddar cheese

    1/2 c bisquick

    1 c. milk

    2 eggs

    Directions:

    Brown beef and onion, stir in salt. Place in a pie plate, sprinkle with cheese. Mix remainder and pour over top. Bake at 400 for about 25 min. or until knife inserted in center comes out clean. 6 servings.

  7. Shepherds pie, salisbury steaks w/ gravy and mashed potatoes, you can do hamburgers with a number of things in them for something different.  Stuffed peppers are awesome.  Tacos, there's just so many things you can do.

  10. Stuffed Bell Peppers

    Get about 1.2 lbs of ground beef and four bell peppers (color doesn't matter).

    Dice half an onion and add it to the beef

    Peel and mince four or five cloves of garlic, and add to the beef.

    Add some Worcestershire sauce and pepper, and mix.

    Cut the stems out of the tops of the bell peppers to make a holes about an inch wide.

    Remove the seeds from the bell peppers and clean them.

    Stuff the beef into the bell peppers. 1.2 lbs should be about the right amount for four peppers.

    Put the peppers into the oven at 400 degrees F. Bake until the skins of the peppers has turned brown in a few places (sorry, I don't have a time in minutes, I do it by feel).

    Mix together and slap on a hamburger bun. Enjoy.

    By the way, this is a very common arab dish.

    Also try chili mac. One of my favorites. Just mix hamburger and chili and pour over pasta. Most commonly seen with maccaroni pasta but be creative.

    2 tablespoons vegetable oil or corn oil

    1 small onion, chopped small

    3 medium cloves garlic, minced or pressed through garlic press

    2 tablespoons chili powder

    1 teaspoon ground cumin

    1 teaspoon ground coriander

    1/2 teaspoon dried oregano

    1/4 teaspoon cayenne pepper

    Table salt

    1 pound 90% lean ground beef (or leaner)

    1/2 cup tomato sauce

    1/2 cup low-sodium chicken broth

    1 teaspoon brown sugar

    2 teaspoons vinegar (preferably cider vinegar)

    Ground black pepper

    8 taco shells (warmed according to package instructions)

    1 cup shredded Cheddar cheese, or Monterey Jack cheese

    2 cups shredded iceberg lettuce

    2 small tomatoes, chopped small

    1/2 cup sour cream

    1 avocado, diced medium

    1 small onion, chopped small

    2 tablespoons minced fresh cilantro leaves

    Hot pepper sauce , such as Tabasco

    Cooking Directions

    Heat oil in medium skillet over medium heat until hot and shimmering but not smoking, about 2 minutes; add onion and cook, stirring occasionally, until softened, about 4 minutes. Add garlic, spices, and 1/2 teaspoon salt; cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook, breaking meat up with wooden spoon and scraping pan bottom to prevent scorching, until beef is no longer pink, about 5 minutes. Add tomato sauce, chicken broth, brown sugar, and vinegar; bring to simmer. Reduce heat to medium-low and simmer, uncovered, stirring frequently and breaking meat up so that no chunks remain, until liquid has reduced and thickened (mixture should not be completely dry), about 10 minutes. Adjust seasonings with salt and pepper.

    Using wide, shallow spoon, divide filling evenly among taco shells; place two tacos on individual plates. Serve immediately, passing toppings separately.

    Yield: 4 servings

  13. Taco Ring

    1 lb ground beef

    1 package taco mix

    8 oz cheddar or jack cheese

    2 pkgs crescent rolls

    Brown beef, drain of grease and add taco mix and water, according to

    directions. When done add cheese and mix together until melted. Remove from heat and set aside.

    Preheat oven to 350 F. Take crescent rolls and place each triangle on a greased cookie sheet, overlapping with the long point facing out in a circle. Taking a spoon or ice cream scoop, scoop up some of the ground beef mixture and place spoonfuls on the widest part of the ring all the way around. Take the points and fold them over and tuck them in under the wide part, covering part of the beef mixture. Bake for about 15-20 minutes or until brown. Serve slices with chopped lettuce, tomatoes, shredded cheese, sour cream, and salsa.

    Stuffed Bell Peppers

    3 bell peppers, halved and blanched

    4 slices bacon

    1 cup chopped onion

    1 lb ground beef

    ½  tsp garlic salt

    ½ tsp paprika

    2 cups cooked rice

    ½ cup catsup

    ½ cup spaghetti sauce

    Saute bacon, add onion, add ground beef and brown. Stir in remaining ingredients. Place peppers in a shallow casserole dish. Fill bell peppers, cover and bake at 350 F for 40 minutes. Remove cover ant top with spaghetti sauce, bake for 10 minutes longer, uncovered.

    Porcupine Balls

    1 egg

    ½ cup water

    1 envelope lipton onion soup mix

    1 ½ lbs lean ground beef

    ½ - ¾ cup uncooked minute rice

    1 – 46 oz bottle of Campbell Tomato Juice

    1 tsp sugar

    Beat egg slightly with water and 2 tbs soup mix. Mix lightly with beef and ¼ cup of rice. Shape into large meatballs (1 ½ to 2 inches). Roll in remaining rice, pressing it lightly into the meatball. Use more rice if needed.

    Heat tomato juice to boiling. Stir in remaining onion soup mix and sugar. Place meatballs in sauce and cover. Simmer, stirring several times for 50 minutes.

    Serving suggestions:  Great with a vegetable or salad and rolls.

    Minestrone Soup

    Ingredients:

    1 lb hamburger

    1 c chopped onion

    1 t minced garlic

    1/4 tsp Pepper

    1 can beef or broth

    2 cans water

    3 tsp beef soup base (heaping)

    1 1/2 tsp Italian seasoning OR

    1/2 tsp EACH fresh oregano, basil, sage, rosemary, and thyme.

    16 oz Can whole tomatoes, broken into bite sized pieces

    8 oz can kidney beans, un-drained

    1 1/2 c sliced carrots

    1 c frozen green beans or 2 zucchini, chopped

    1 c frozen lima beans or corn

    1 can of garbanzo beans (chick peas)

    Brown hamburger, onion, garlic and pepper. Add rest of ingredients except macaroni.  Cook for at least 20 min add macaroni and cook until macaroni is done.

    Or

    Easy and good. In a large pot add tomato juice and water to make a veggie broth. Add chopped onion, zucchini, carrots, celery. Add canned kidney beans- rinsed. Add a bay leaf or two, celery salt (optional),and pepper. Precook your favorite pasta in another pot. Rinse and add to soup pot. Discard bay leaves before eating. Good with fresh grated parm!

    Sweet & Sour Meatballs

    1 lb ground beef

    1 tsp garlic salt

    dash pepper

    1 sml can pineapple (optional)

    1 can or jar sweet & sour sauce (I like the Contadina brand, but any will work)

    Combine first 3 ingredients. Make into meatballs, 1 to 1 ½ inch wide. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes. Drain of grease. Bake for 10 more minutes. Drain again. Pour sauce over meatballs and bake for 15 minutes. Serve over rice. Makes 2-4 servings.

    Meatballs & Sour Cream (Stroganoff)

    1 lb ground beef

    1 tsp garlic salt

    dash pepper

    1 cup water

    1 package lipton onion soup mix

    1 - 8 oz  carton sour cream

    1 package wide egg noodles (cooked according to package directions), drained

    1 tbs butter (add to cooked noodles)

    Add salt and pepper to ground beef, mix well. Form ground beef into 1-1 ½ inch wide meatballs. Brown in skillet. Pour off grease. Add soup mix and water. Cook 20 minutes, stirring occasionally. Turn off heat and add sour cream. Serve over noodles.
