  1. I agree with Brooke F.  The Pillsbury dough that you can buy near their biscuits is so good it's almost indistinguishable from restaurant dough.  It saves a great deal of time and effort as well.


  2. PIZZA CRUST - THIN AND CRISPY  

    3 1/2 to 4 c. sifted all purpose flour

    2 pkg. dry yeast

    1 1/2 c. water

    Olive or vegetable oil

    2 1/2 tsp. salt

    In large bowl, combine 2 cups of the flour and the yeast. Blend water, 3 tablespoons oil and salt; heat to lukewarm. Add to flour mixture. Beat at medium speed for 3 minutes. Turn onto floured surface and knead until smooth. Place in greased bowl; turn once to grease entire surface.

    Cover; let rise until doubled, about 1 hour. Punch down. Let rest 10 minutes. Shape into 2 balls. Roll each to fit 15 inch pizza pan. Place dough in pans and form edges. Prick crust.

    Bake at 450 degrees for 15 to 20 minutes. Spread with pizza sauce and desired toppings. Return to oven for 10 minutes or until toppings bubbles and edges of crust brown.

    FREEZE THIN AND CRISPY CRUSTS:

    Bake as directed for 15 minutes. Remove from oven, cool, wrap and freeze. When ready to bake, remove the crust from freezer, let stand at room temperature for 20 minutes, bake as directed.

    PIZZA SAUCE:

    3 1/2 c. plum tomatoes

    1 (6 oz.) can tomato paste

    3 c. water

    2 tbsp. instant minced onion

    1/2 tsp. garlic powder

    1/4 tsp. crushed red pepper

    1/2 tsp. oregano

    1 bayleaf

    1 1/2 tsp. salt

    1/4 tsp. pepper

    1 tsp. sugar

    2 tbsp. olive or salad oil

    Force tomatoes through coarse sieve to puree and remove seed. Combine with remaining ingredients. Bring to a boil. Reduce, heat and simmer, uncovered for 1 hour and a half or until sauce is quite thick. Makes about 5 cups sauce.


  3. pillsbury dough...i use it for my pizza..u can get it by the biscuits and cinnamon rolls at the store...it's so easty to make and not messey  

  4. I made some awesome pizza over the weekend.

    I’ve been looking into making NY style pizza.

    I had to buy a pizza stone and peel.

    I can only make 12" pizzas.  This is because of the size of the oven, pizza stone and pizza peel.

    The trick is to make the crust very thin.  Don’t use too much sauce and use plenty of mozzarella cheese.

    Pizza Crust:

    I divided this into 3 equal portions to make 3 12" pizzas.

    Uncooked Sauce:

    I used a food processor.

    • Two tomatoes.

    • 1 clove garlic, mashed and minced

    • 1 teaspoon salt

    • 1 can (6 ounces) tomato paste

    • 1 can (8 ounces) tomato sauce

    • 1/2 teaspoon sugar

    • 1/8 teaspoon pepper

    • 1/2 teaspoon oregano

    • 1 tablespoon olive oil

    • dash red pepper, optional

    Pizza:

    Place stone in the oven on bottom shelf.  Preheat the oven to 475.

    I used a rolling pin to make the crust as thin as possible.

    Rub flour into the grain of the wood on the pizza peel.  This is so the pizza will not stick to the peel when you slide it on the stone.

    Place dough on pizza peel.

    Rub a little EVOO on the crust. Especially around the edges.

    Add sauce (very thin layer), sprinkle some Romano cheese on top of the sauce and add the mozzarella cheese.

    Make sure pizza is not sticking to the peel.  If it is, then lift up the edge of the crust and blow under the pizza to unstick it.  Make sure the pizza can easily slide off the peel.

    Once the oven heats to 475, slide the pizza on to the pizza stone.  Cook 10-11 minutes.

    We're huge homemade bread eaters in my home but I don't own a bread machine. If you don't own a bread machine you can always made the dough by hand.

    1)Add yeast, warm water and sugar is a small bowl. Let yeast foam (2x its original size)

    2) Add yeast mixture to rest of ingredients.

    3)Knead the dough until it has an elastic consistency without using too much additional flour

    4) Put in large bowl,oiled and cover. Sit it in a warm place until it doubles in size

    5)Punch down the dough and shape into pizza crust shape or pizza pan. Let rise 15-20 mins.

    Another tip for pizza dough is to bake the crust without any toppings for about 10 mins and then add your ingredients. This will keep the crust from getting soggy or not cooking in the middle.
