    2  large baking potatoes (about 8 ounces each)

    6  tablespoons thinly sliced green onion (3)

    3  tablespoons butter

    3  tablespoons all-purpose flour

    2  teaspoons snipped fresh dill or chives or 1/4 teaspoon dried dill

    1/4  teaspoon salt

    1/4  teaspoon black pepper

    4  cups milk

    1-1/4  cups shredded American cheese (5 ounces)

    4  slices bacon, crisp-cooked, drained, and crumbled

    Directions

    1. Scrub potatoes with a vegetable brush; pat dry. Prick potatoes with a fork. Bake in a 425 degree F oven for 40 to 60 minutes or until tender; cool. Cut each potato lengthwise. Scoop out white portion of each potato. Break up any large pieces of potato. Discard potato skins.

    2. In a large saucepan cook 3 tablespoons of the green onion in butter over medium heat until tender. Stir in flour, dill, salt, and pepper. Add milk all at once. Cook and stir for 12 to 15 minutes or until thickened and bubbly. Add the potato and 1 cup of the cheese; stir until cheese melts.

    3. Top each serving with the remaining 1/4 cup cheese, remaining 3 tablespoons green onion, and the bacon.

    4. Makes 5 to 6 servings (5 1/2 cups)

  3. I like to have my favorite meat with potatoes. But just about any thing will work with them. Try a good beef cut with garlic and onions a bay leaf and salt and pepper. Mix some green veggies in for extra flavor. When done just remove the bay leaf and enjoy.

    1/2 c Parmesan cheese

    1 1/2 c Cheddar cheese; shredded

    2 c Milk

    1/4 c Flour

    1 tb Butter; melted

    1/4 c Bread crumbs

    5 c Potatoes; peeled and sliced

    Instructions:

    Preheat oven to 350. In large saucepan melt 1/4 cup butter; add flour and

    milk and bring to a boil. Add cheeses and stir, then add potatoes, stirring

    to mix well. Pour into 9 X 13 inch pan. Melt 1 tablespoon butter and

    combine with breadcrumbs. Sprinkle over top of potatoes. Cover and bake for

    1 to 1 1/2 hours.

    Bacon and Potato Pie

    1 lb Bacon

    1 Onion, chpd

    8 Eggs, beaten

    1 lb Russet potatoes, peeled,

    -grated

    2 3/4 c Sharp cheddar, grated

    1 ds Pepper

    Instructions:

    Preheat oven 350 F. Grease 9x13" glass baking dish. Microwave bacon,

    remove. Add onion to bacon fat, microwave; remove. Combine eggs, potatoes,

    cheese, and pepper. Crumble bacon and mix into egg mixture. Add onions.

    Pour into prepared baking dish. Bake until center is set, 45 mins. Cut into

    squares.

    Beans and Potatoes

    Ingredients:

    2 c Dried pinto beans (or canned)

    3 lg Potatoes, peeled and

    Chopped

    2 Stalks celery, chopped

    Salt to taste

    1 lg Sweet onion, sliced

    Instructions:

    Cook beans until tender.( OR use canned beans)

    Add potatoes and celery and cook until potatoes are tender.

    Salt to taste.

    Saute onion until browned. Mix in with beans and potatoes.

    If you like it hot, a shot or two of hot sauce would be good.

  6. You could make mashed potatoes, warm corn tortillas, add the potatoes into individual tacos and fry them, either folded over or rolled like a taquito. On the side you could make a quick salsa, boil one tomatoe ,1-2 jalapenos for about 10 minutes , add a little peice of onion, and salt and blend it in your blender. You could top the finished tacos with lettuce, sour cream, shredded cheese, and your salsa!! Good Luck!!

  9. hamburger Potato casserole

    INGREDIENTS

    1 tablespoon olive oil

    1 yellow onion, thinly sliced

    1 pound ground beef

    1/4 cup butter

    1/4 cup all-purpose flour

    3 cups milk

    1 pint heavy cream

    salt and pepper to taste

    5 potatoes, sliced

    2 cups shredded Cheddar cheese

    2 cups shredded Monterey Jack cheese

    1 cup milk

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

    Heat oil in a large heavy skillet over medium heat. Saute onions until translucent; set aside. Cook ground beef until evenly brown. Drain excess fat, and set beef aside. Melt butter in the skillet. Add flour, and stir with a whisk for 5 minutes. Gradually whisk in 3 cups milk, then the cream. Season with salt and pepper, and remove from heat.

    Spread a small amount of sauce in the bottom of a 9x13 inch casserole dish. Alternate layers of potatoes, onions, ground beef, cheese and sauce, with 2 to 3 layers of each. Reserve some cheese to sprinkle on top. If you run short of sauce, press down on all layers, and add milk as needed. Sprinkle remaining cheese on top.

    Bake in preheated oven for 45 to 55 minutes, or until potatoes are soft.

  10. If you like hot peppers here is a great one...

    Sorry i don't use actual measurements on this anymore I have been cooking it so long.  I season it to taste and always have so forget the actual measurements.  This is from memory so it may sound a little un-orthodox.

    1 Medium size jar of Hot Cherry peppers  You will need about 12 to 15 of them so try to judge.  I keep a gallon jar in the house at all time.  (Why you ask?, because I likes it hot!

    6 small Potatoes

    1 and half or 2 pounds of "FRESH" Chicken tenders (not the breaded frozen kind.

    Olive oil

    garlic

    basil

    oregano

    salt and black pepper

    slice the potatoes in 1/8 inch slices Then rinse them. then you need to boil the potatoes half way.  when they are half way boiled, pure them into a medium to large baking pan.  (I like the large its easier to turn them while they are cooking, you'll see what I mean if you use a medium one)  cover with tin foil and put that aside for now.

    Heat a large saute pan coat the bottom with the oil.  When the oil is heated (don't let it burn) take a huge heaping spoonfull of crushed or diced fresh garlic put it in the oil, sprinkle roughly about 1 1/2 tablespoons each of both Basil, Oregano and black pepper into the pan stirring it keeping it from burning. (I remember the recipe has salt but I don't use salt on anything anymore).  When the garlic starts to tan start laying the chicken tenders in the pan.  Cooking them on both sides until they are dark brown.  

    While you are cooking the chicken, start cutting up the cherry peppers into quarters.  taking the stem off and if you are a wus taking out the seeds. (I leave the seeds in becuase I likes it hot) quarter the cherry peppers and start tossing them in with the chicken cooking them with the chicken.  

    OK, when the chicken is all cooked I want you to pour about a quarter of the jar of juice from the cherry peppers into the the saute pan and let them all saute together, when the juice starts to boil and you notice it start to evaporate, pour the contents of the sautes pan into the baking pan with the potatoes and stir it up all together nicely.  and while your at it pour another quarter of the jar of juice in the pan too what the h**l.  

    let that bake for about a half hour to an hour at about 350- 375.  checking it and stiring it around like every 5 minutes so you keep the juices spread evenly.  When the potatoes start to fall apart it isdone.  

    You can serve it on a dish, you can serve it in a bowl, you can serve it anyway you like.  Just be ready to have your head sweat while your eating it.  Why you ask, becuae it gets hot.

    Now anyone that tries this.  I want to know what you think.  I make this for a lot of "friends" they love it.  I haven't found a person who hasn't.  

    Oh and one more thing.  If you really really like it hot.  Put some aside for lunch tomorrow.  It kinda ferments overnight and gets hotter....

  11. A baked potato makes a very good meal in itself...

    After baking the potato in the oven or microwave (don't forget to poke holes in it with a fork), cut the potato in half and smother it with any combo of the following toppings:

    Butter

    Sour cream

    Onions

    chives

    Bacon (using fresh cooked bacon tastes better than bacon bits)

    Broccoli (or other vegetable)

    Ranch dressing

    leftover chicken

    taco meat

    olives

    The options really are endless- and this is a good way to use up leftovers too!

  12. DOUBLE BAKED

    this is how i do it..

    wash the potato's and oil them up

    poke a few holes on one side

    throw in 350 oven for one hour.

    take out of oven and cut on side to remove potato filling

    mix sour cream..about 4 tablespoons for 6 potato's,Cheddar cheese,half a cup.

    4 table spoons of butter,salt and pepper to taste.

    place back in potato's and reheat for 20 minutes

    .

  13. Raclette! Steam small potatoes and serve with melted cheese, pickled gherkins, and maybe  some piccalilli.
