I normally think of a potluck dinner as whatever is in the larder, or fridge to make a good dish.  You could try a nice easy savoury  rice dish like cabbage rice or rice with peas and ham and sweetcorn.  Or quick and easy oven bake chips, homemade of course.  Served with a nice crispy lettuce salad.

Any kind of mashed dinner with many varieties of gravy, will put the appropriate 'kick' in those dishes. Peace!

Mashed potatoes and gravy, potato/macaroni/pasta/green/fruit(or some kind of) salad, coleslaw, baked beans, peas and corn, some kind of casserole, some steamed veggies,macaroni and cheese, sweet potato fries(or regular fries), um that's all I can think of.

Try a really great salad, carrots, mushrooms, spinach, celery, cucumbers, tomatoes, green peppers, red peppers, yellow peppers, cauliflowers, broccoli and use a homemade vinaigrette dressing.  With fried chicken you need to throw something really healthy in there.

Cheesy hash browns!

Mix a 2# bag of thawed frozen hash browns, 2 cans iof cream of mushroom soup, 16 oz of sour cream, and 2-3 cups sharp shredded cheddar cheese and pour into a crock pot. It takes about 4 hours on high, so you might want to start it at home.

You won't have any left, I guarantee!
