  1. Some homestyle mashed potatoes topped with shredded cheese, and a side of mixed veggies.

  2. Curry rice and peas. Heck yeah.

  3. black beans with mango salsa

  4. Try black eyed peas or collard greens

You could make rice and throw in a little diced fried pineapple

Fresh cooked veggies would compliment the complexity of your main dish

  5. If you like spicy foods, I would suggest a nice flavorful Spanish rice mixed with fresh diced vegetables and a splash of your favorite hot sauce.

    Rice compliments chicken very well.

Another suggestion would be homemade mashed potatoes with garlic and bleu cheese.  Mix potatoes with heavy whipping cream and then add other ingredients for an unbelievable treat!

  6. Fried plantains or yucca, caribbean fruit salad, rice & peas, corn bread, mango or pineapple salsa, green salad....

  7. Definitely fried plantains.  Very tasty indeed.  :)

    p.s. - Thanks, "originalkippyj"!

  8. Traditionally it's Rice and Peas and plantain, cole slaw or a green salad....you can also have spinach.....they're all fairly simple to make...

  9. roti

  10. I would say a rice dish and maybe a bean dish. Also bread.

  11. Fried or BBQ plantains, rice with beans or peas, pineapple, mango and papaya salad, a salsa, some wilted greens like kale or mustard greens.

  12. I really like rice pilaf with dried cranberries and almonds (use chicken stock instead of water), and a raita (even though that's not Caribbean) because it's so cooling.

EDIT:  oh yeah, I forgot about the fried plantains...here's a thumbs up for you, sugrnspyce4...

  13. Rice and peas and  cabbage
