What is a good small business to open in Puerto Vallarta, Mexico?

My husband is Mexican and right now we live in Hawaii. I would love for my 2 young daughters to speak Spanish fluently and learn their Mexican culture too. My only concern is financial stability. I heard laundry mats are good to open. Or possibly a restaurant because my husband can cook very well. What other small businesses are good to open?

I was thinking about a small restaurant since people love to eat. Start small. Like tacos with a twist. Quesadillos and salads. Open up something near busy tourists because even when people are on vacation, they still love a good inexpensive place to eat and drink. Since your hubby can cook, this will be perfect for him and you guys can expand later by combining your cultures into the menu platter. Tacos with Poi may not go, but try taco salad with mahi mahi and coconut mango lime sauce.
