Go to one of the touist shops around Vatican City and buy a wine bottle opener with the Pope on it.  It is called a "Popener", and he raises his hands in a papal blessing as you s***w it into the cork.

You won't be able to carry the wine on the plane, so if you're planning on bringing wine back from Roma, be sure that you have it shipped to the states.

For a nice Souvenir how about a fine handcrafted piece of furniture for your home, or a wall hanging, something actually MADE IN ROME, so that each time you use it/look at it/speak about it, you'll be reminded of the wonderful time you had in the city.

I brought back a leather backpack, purchased from a store directly across from the Trevii Fountain- I'll remember my trip each time I use the bag.
