What is a good vegetarian sandwich recipe?

I usually put cheese and tomatoes but I recently substituted the tomato for cucumber and it was really good so I was wondering what other good combos are.

  1. Mushrooms, Fontina, Taleggio, Gorgonzola

    Artichokes, mozzarella, ricotta and olive oil

    Mushrooms, Fontina, Salad and Mayonnaise

    Red and Yellow pepper, Provolone piccante


  2. How about a caprese sandwich?

    It's basically mozzarella cheese with tomatoes and basil with toasted bread. There's a lot of recipes online for them.

  3. Salmon & Lemon Sandwiches.

    Spread 3 slices of bread with cream cheese,

    Top first slice with a layer of sliced lemon, cracked black pepper and basil leaves.

    Place the second slice of bread on top and place a layer of sliced salmon.

    Top with the third slice of bread, spread side down.

    Trim crusts and cut into fingers or cubes.

  4. Tofurkey and/or avocado are nice choices for vegetarian sandwiches.

  5. Garden Salad Sandwiches-

    1 green pepper, shredded

    6 cooked beets, minced

    1 stalk celery, minced

    1/4 cup mamayonnaise

    Few drops onion juice

    1/2 cup chilli sauce or ketchup

    16 slices rye bread, buttered

    8 lettuce leaves

    Combine vegetables, mayonnaise, onion juice and chili sauce. Spread half of bread with filing and put slices together with lettuce between. Makes 8 sandwhiches.

    Amber Sandwiches-

    6 ounces cream cheese

    1/2 cup honey

    12 slices whole-wheat bread

    peanut butter

    6 lettuce leaves (I would leave out the lettuce, but it's up to you!)

    Blend cream cheese and honey and spread on half of bread. Spread remaining slices with peanut butter. Put slices together with lettuce leaf between. Makes 6 sandwiches.

    Apricot Banana Toast

    Toast bread on 1 side and butter the other side. Spread with apricot preserves. Coverw ith slices of banana and sprinkle with brown sugar and a little cinnamon. Bake in oven until brown sugar is melted. Serve hot.

  8. i'm a vegetarian and a huge sandwich lover, so when i'm in the mood for sandwich its usually a tofu sandwich on toasted bread and melted cheese with any veggies of your choose.

    Try with a potato and brinjal stuffed inside.

    Try mayonnaise and margarine as base.

  10. Hi cupcake! I love sandwiches. So many different types and varieties and combinations I make! Most of all of my sandwiches have avocado and vegan cheese sauce. Eggplant, tomatoes, hummus and avocado are good. Tofu wrapped in seaweed, mustard,  tomatoes, and kale is good. I like adding vegan deli meats sometimes and making a vegan BLT, meatball sub, or tofurkey cheezesteak. Sometimes I just get a sub and put all the vegetables I have in it and make a salad sandwich! Peas, carrots, and spinach mixed with vegan cream cheese is great! Mashed cauliflower, black beans, and zucchini  with BBQ sauce is good. Black olives, green beans, vegan mayo, and tomatoes.

    penut butter and jam

    peanut butter and bannana

    avocado

    avocado with tomato

    cheese and marmite

    cream cheese and cucumber

  12. 12 grain whole wheat bread (sooooooo yummy!)

    spread a good bit (but not too thick) layer of garden vegetable cream cheese on one slice.

    Layer with lettuce,a thick slice of tomato, cucumber and red pepper.

    Then top with Pepperjack or feta cheese.

    Add jalapeno pepper for an extra kick.

    A dash of pepper and it's done.

    Oh, I just thought of another one i love.

    Morningstar Farm *non meat crumbles* in the microwave for 1 minute 50 seconds. Spread on thick wheat bread.

    Sprinkle shredded cheeses on top.

    add some crushed red bell pepper.

    a little onion and small tomato chunks (or spread salsa on bread).

  13. Roasted red pepper hummus on whole wheat bread.  Layer shredded carrots, thinly sliced cucumbers, paper-thin sliced red onion and sliced green peppers.  Delicious

  15. Well, for something really quick and basic, I usually go with tofurkey and vegenaise in a pita, but for something jazzier, I like a Boca Chik'n patty on Ciabatta bread with a big mound of hummus.  

  16. Make fake "bacon" out of tempeh, and add lettuce and tomato =)
