I've wanted to try it since I read the book "A Perfect Storm" but even on sale it's expensive. Today I tossed caution to the winds and bought some but I don't know how to cook it, please help.

  1. Because swordfish is a meaty fish, it does really great on the grill. What I have done in the past is to marinade the fish for about an hour in the fridge with the juice from a fresh lemon, olive oil, salt , pepper and whatever I was in the mood for that day.  If you like spicy, a jerk seasoning or blackened seasoning is GREAT!  Otherwise, try adding lots of garlic powder, onion powder and dried italian seasoning.  Grill each side for a few minutes and until the fish is no longer bouncy.

  2. Marinate the sword fish in lemon juice, salt, pepper, and some olive oil.  While it is marinating, saute some thinly sliced red bell peppers in olive oil with finely sliced garlic, salt, pepper, capers.  When peppers begin to brown slightly, splash in some balsamic vinegar.  Cook 2-3 mins longer.  Heat a pan with olive oil till pretty hot.  Sear your swordfish and let cook approx 3-4 mins on each side, depending on the thickness.  Plate the fish and top with your peppers.and whatever sauce is left in the pan.  Yummy!
