Whats a good way to make sauce for lasagna? I like a lot of sauce and is there a good recipe to make good homemade sauce?

  1. I am often teased that my lasagna weights in at 15 pounds because of all the meat in the sauce and all the cheese. Here is how I make my lasagna - it takes time but is well worth it:

    Lasagna

    One recipe Spaghetti Sauce Montanarella (recipe to follow) or your favorite spaghetti/pasta sauce

    6 dried lasagna noodles

    1 egg, beaten

    1 15-ounce container ricotta cheese or 2 cups cream-style cottage cheese, drained

    1/2 cup grated Parmesan cheese

    12 ounces each shredded mozzarella and Provolone cheese

    Grated Parmesan cheese (optional)

    Directions

    Cook noodles for 10 to 12 minutes or until tender but still firm. Drain noodles; rinse with cold water. Drain well; set aside.

    For filling, combine egg, ricotta, and the 1/2 cup Parmesan cheese. Set aside.

    Spread about 1/2 cup of the sauce over the bottom of a 2-quart rectangular baking dish. Layer half of the cooked noodles in the bottom of the dish, trimming or overlapping as necessary to fit. Spread with half of the filling. Top with half of the remaining meat sauce and half of the mozzarella cheese. Repeat layers. If desired, sprinkle additional Parmesan cheese over top.

    Place baking dish on a baking sheet. Bake in a 375 degree F oven for 30 to 35 minutes or until heated through. Let stand for 10 minutes before serving.

    Makes 8 servings

    Make-ahead directions: Prepare as above through Step 5. Cover unbaked lasagna; chill for up to 24 hours. To serve, bake, covered, in a 375 degree F oven for 40 minutes. Uncover; bake about 20 minutes more or until heated through. Let stand for 10 minutes before serving.

    Spaghetti Sauce Montanarella

    Ingredients

    1 pound each Italian sausage - I use a combination of sweet and hot

    1 pound lean ground beef

    1 pound smoked sausage - I prefer to use beef

    1 cup chopped onion (1 large)

    2 cloves garlic, minced

    2 14-1/2-ounce cans diced tomatoes, undrained

    1 6-ounce can tomato paste

    2 4-ounce cans mushroom stems and pieces, drained

    2 teaspoons dried Italian seasoning, crushed

    1 1/2 teaspoons crushed red pepper

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    1 cup chopped green sweet pepper (1 large)

    4 ounces each shredded mozzarella and Provolone cheese

    4 tablespoons shredded or grated Parmesan cheese

    Directions

    In a large skillet cook the sausage, ground beef, smoked sausage, onion, and garlic over medium heat until meat is brown and onion is tender. Drain off fat.

    Meanwhile, in a 3-1/2- or 4-quart slow cooker or large pot, stir together undrained tomatoes, tomato paste, mushrooms, Italian seasoning, salt, and black pepper. Stir in meat mixture.

    Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours or simmer on low on the cooktop for a couple of hours. Stir in sweet pepper and cheeses; simmer until the cheese is melted and incorporated.

  2. Use egg roll wraps instead of pasta

    Blend your ricotta with sour cream and  use a zip lock to pipe it on .

    Use a jack and swiss cheese in addition to cheddar and Parmesan

    Add sliced black olives and sliced mushrooms on top of your layers of sauce not in the sauce

    sauce,, no idea I just do it 2 - 3 kinds ot tomato canned and fresh,, onion,, garlic,, and Italian seasoning.. I also added Marinara at one time

  4. I start with roma tomatoes, and olive oil, adding italian basil, oregano (italian, NOT the mexican. Smell it. If it reminds you of a pizza parlor, it's italian.) fresh minced garlic, onions and  roasted red peppers.

  5. LASAGNA WITH MEAT SAUCE  

    2 tbsp. olive oil (optional)

    2 cloves garlic, minced

    1 lb. ground chuck

    1 pkg. dried onion soup

    1 1/2 c. water

    1 can tomato paste

    1 (15 oz.) can tomato sauce

    1/2 tsp. salt (optional)

    1/4 tsp. pepper

    1/2 tsp. sugar

    1 tsp. oregano

    Brown meat and garlic in large skillet. Drain off fat and add remaining ingredients. Bring to a boil and simmer for 30 minutes.

    1/2 lb. lasagna noodles (1 1/2 inch wide) or 9 noodles

    1 lb. Ricotta or cottage cheese

    3/4 to 1 lb. Mozzarella cheese, shredded or sliced

    2 tbsp. Parmesan cheese

    While sauce is simmering, cook lasagna according to package directions. Drain and place in cold water. Remove from cold water as needed. Place 2 tablespoons of sauce in bottom of 12x18 pan. Arrange single layer of lasagna placed lengthwise, layer of Mozzarella, layer of Ricotta, meat sauce and Parmesan cheese. Repeat 2 more times ending with sauce and Parmesan cheese. Bake at 350 degrees for 30 minutes. Let set for a few minutes before cutting to firm up lasagna. This is great reheated. Serves 8-10 people.


  6. My recipe goes like this... and you can adjust quantities how you like, it doesn't really matter.

    Meat sauce:

    2 teaspoons of olive oil

    One finely chopped up onion

    Teaspoon of chopped garlic

    Mince meat / hamburger about 1 pound

    1 can tomato sauce

    1 can chopped tomatoes

    basil

    heat the oil in a large pan. Add onion and garlic and cook until soft. The add hamburger mince and cook until it isn't pink. Add tomatoes and sauce, then basil. Mix all together and simmer for a while (10 minutes or so). Add salt and pepper if you think it needs more flavour. Optional: add mushrooms or spinach to the meat sauce

    Cheese sauce

    2 packets of cheese sauce mix

    grated cheddar (1/4 cup)

    mix up sauce according to instructions

    Add grated cheese and mix in

    Lay lasagne sheets (dried or fresh) in a lasagne dish

    Layer meat sauce then cheese sauce to cover the pasta

    Repeat until you reach the top of the dish

    Sprinkle some cheese on top

    Place in hot oven (180 degrees C) for about an hour, until it's bubbling and the cheese on top has melted.

    YUM! Serve with green salad and garlic bread
