What is a good way to organize a club of 6 people?

Since you have this in the environmental section - I assume they are going to do environmental things.  Have them give you ideas as to what they want.  Make a routine as to the structure of the meetings so they know what to expect. Don't have to much for them to accomplish between meetings unless they are mature enough.  Most kids I have worked with  will not come back in a week or longer with what is necessary. They 'forget' their homework - so make it fun and educational and self contained each time.

THATS EASY!! GET THEM ALL IN ONE PLACE, THEN THEY CAN MEET UP EVRY...WEEK OR SO TO PLAY TOGETHER OR DO WHATEVR YOU WANT THEM TO DO. THEY CAN HAVE A SPECIAL PLACE TO MEET UP, SUCH AS A TREE HOUSE OR...MCDONALDS!! THEY CAN EAT THEN PLAY IN THE PLAYHOUSE!
