What is a great recipe for sweet potato fries, that will be crunchy?

Coat them lightly with a flower mixture or better use  one of the commercial coatings I use tempura . The secret is to fry them until they are half done then freeze them. Once frozen re fry them until done and they will be crispy.

Sweet potatoes won't really get crunhy unless you coat them in something and still then they won;t get crunchy like regular fries. Sweet potatoes burn and get bitter very easily due to the natural sugars in them.
