  1. how bout salsa or spanish rice? for salsa you need well it depends on how many people are in class but you can use 2 tomatoes 2tsp yellow onoin and red onion 2 jalapanoes you can use seeds or no seeds on how hot you want it nd about 4strands of celentro you can use a food processor or cut it all up for a chunky salsa add as much as what you think it needs in it oh and dont forget a squeeze of lemon !!good luck..dont forget the chips

  2. really easy, refried beans with cotija cheese and chips!! and thats very mexicanish!!!!

  3. If you don't want any preparation buy packaged guacamole from the grocery store, put it in a bowl and take it with tortilla chips

  4. Are you looking for Spanish food or Mexican food? The two countries have quite different cousines.

  5. One of my favorite Spanish dishes is paella...but it takes some time, and can be expensive, as it most often contains shellfish.  I also really love gazpacho, but it can take a bit of prep time (lots of veggies to chop up), and might be tricky to serve.

The latest "trendy" Spanish food is tapas.  Tapas restaurants are sprouting up all over the place.  There's no single recipe for tapas, because it really is just a way of serving several different dishes in small sizes - appetizers, basically.

The links below should offer some suggestions that would work for you.

Edit:  I have to agree with Terry...most of the suggestions previously posted are for Mexican food, and this is very different from Spanish food.  Be careful to choose the one that's most appropriate to the class assignment.

  6. INGREDIENTS

        * 10 (6 inch) corn tortillas

        * 2 cups shredded mozzarella cheese

        * 1 (2 ounce) can sliced black olives

        * 2 avocados - peeled, pitted and sliced

        * 2 teaspoons hot pepper sauce

    DIRECTIONS

       1. Heat a large frying pan or griddle over a medium heat. Place one tortilla flat on the frying pan. After 1 minute flip the tortilla over. Sprinkle a little more than 1/4 cup cheese on the tortilla, followed by some olives, avocado, and hot pepper sauce. Place another tortilla on top to make a sandwich. Cover the quesadilla with a lid. After one minute, flip the quesadilla. When the cheese has melted on the inside, remove the quesadilla. Repeat with remaining ingredients.

       2. Cut the quesadillas into triangles and serve.

  7. How about chile con queso?  The American version is usually just made with pastuerized process cheese (Velveeta) and canned  Ro-tel Brand tomatoes.  I use the tomatoes that have cilantro in them.  Empty the can of tomatoes into a saucepan...heat on med. heat and add 1 lb. of Velveeta cheese (in small slices or chunks) to it as it's heating.  Stir and heat on low-med. heat for a few minutes until all the cheese is melted.  Serve it warm with tortilla chips.  It's great!

  8. Ultimate Nachos

80 corn tortilla chips, approximately 8 ounces

3 to 4 jalapenos, thinly sliced*

4 1/2 ounces diced red onion, approximately 1 cup

6 ounces finely grated Cheddar, approximately 2 1/4 cups

6 ounces finely grated Oaxaca cheese, approximately 2 1/4 cups

2 tablespoons finely chopped fresh oregano leaves

    2 cups fresh salsa

    2 cups sour cream

    2 cups guacamole

*Cook's Note: Depending on your heat preference, you may remove the seeds from the jalapenos or leave them intact.

Set 1 of the oven racks on the lowest shelf and preheat oven to 350 degrees F.

Line a baking pan with parchment paper. Make 8 (2-inch) balls out of aluminum foil. Spray 3 wire cooling racks with non-stick cooking spray and place 1 of the aluminum balls in each of the corners of 2 of the racks.

Lay 1/3 of the chips on one of the racks. Top each chip with a jalapeno slice and sprinkle the chips with 1/3 of the red onions, and 1/3 of both the Cheddar and Oaxaca cheeses. Repeat with the remaining chips and the other 2 racks. Stack the racks on top of one another and set into the parchment lined baking pan. Bake in the oven on the bottom rack for 7 minutes or until the cheese begins to bubble. Sprinkle with fresh oregano. Serve immediately with the salsa, sour cream, and guacamole

  10. quesadillas are easy, and are finger food, you can spice them up by adding canned diced chiles. Actually there are microwavable churros in the frozen food aisle. Or make guacamole, (crushed avocado, diced onion (or onion powder), lime juice, garlic powder, salt and cumin) and bring in chips. you can also get taquitos in the frozen food aisle, or jalepeno poppers.

  11. chicken nuggets are delicious
