  8. Haggis is a traditional Scottish dish. It is actually a type of sausage of which the outer cover is discarded and only the juicy inner meat is eaten. It is composed of mutton and lamb and their offal, highly spiced and bound together with oatmeal, and packed into a sheeps stomach ready for lengthy boiling. Nowadays haggis is generally sold cooked, ready for further cooking and reheating. Haggis is still widely made and is often served with "neeps and tatties", otherwise known as turnips and potatoes.

Haggis is tradionally served for supper on Burns Night, when Scottish communities throughout the world commemorate the birth of the poet Robert Burns (25th Jan 1759). Before the supper is served Burns' Selkirk Grace is recited:

'Some hae meat and canna eat and some wad eat, that want it, But we hae meat and we can eat, Sae let the Lord be thankit.'

Burns night is heavily ritulized, with the haggis being addressed with the Burns Poem 'Address to a Haggis'. Whisky toasts, songs such as Auld Lang Syne and cheers for absent friends makes Burns night an intimate and magical night.

Haggis crisps can also be eaten (for those not brave enough to eat the real thing) and until recently they could be purchased on Scots Rail lounge car. They had to be taken of the bar list as the staff were eating them all!
