  2. These are the ingredients used to make Chaat Masala:  so use what you have on hand.  Use fresh lemon or lime juice to mimic the tart/sour taste.  Otherwise, add a little garam masala.

    Ingredients

    2 tablespoons cumin seeds

    1 1/2 teaspoons fennel seeds

    1 tablespoon garam masala

    1 tablespoon mango powder

    1 tablespoon black salt

    1 teaspoon cayenne pepper

    1 pinch asafetida powder

    1/4 teaspoon ginger, ground

    Directions:

Toast and grind cumin and fennel seeds and combine with remaining ingredients.

  3. The distinct flavor in chaat masala is given by black salt.  So if you have that, you'll be in good shape.  Add some roasted cumin powder, red chili and regular salt.  You can always add other ingredients listed below if you have them handy.

    garam masala

    amchoor (dried green mango powder)

    asafetida

    ginger ground

  4. I've never heard of a substitute
