The generator can be turned into a motor and the turbine used to pump water up into the reservoir where it is stored for generating power later a time of greater need.  A similar arrangement is used at a reservoir below Niagara Falls where water is pumped up using power generated by the Falls at night when commercial and industrial draw is low and the water is released in daytime when it is high.

Reversible turbines, turbines used to both pump water and drive generators are usually the Francis turbine design. There are many hydroelectric pumped storage installations in many countries around the world.
