What is a said check and can it be cashed at any bank?

Sounds like he's just using proper English.  The "said" check.  Meaning the check currently being discussed.

I will send said check next Tuesday... meaning "I will send the check we're talking about" next tuesday.

Did this person send this check by Mail or by FedEx or UPS?

With a courier service there a confirmation number to verify.
