  1. Schnitzel is german for an excalope (a thin boneless slice of meat).  For example weiner schnitzel is a veal escalope. but a schnitzel could be porki or whatever you chose it to be.

  8. Weiner Schnizel- Ultimately:  Young veal, flattened gently , dippled in flour , egg mix and bread crunmbs - fried on a pan -unreal. Austro- German origins- variation apply : ie: Veal Holstein in where a soft fried egg is placed on top  with slivers of anchovies- When dome  correctly Schnitzel is indeed classed as gourmet eating- Unfortunately most restaurants use cheaper yearling beef and have made strange variations of what was once a classical recipe-

    It's  sister classical recipe come from Italy - Veal Milanese- the difference is that Veal cutlets with bone attached are crumbed-

    Both classical recipes a expensive when done right using Veal-Both are "beautiful" dishes to eat-
