  1. just leave them out

    water chestnuts taste like extra crunchy watery potatoes


  2. I've used jicama in place of water chestnuts.   They both maintain their crunch when cooked.

  3. It's there mainly for the crunchy texture. If you don't mind the taste, you might be able to substitute finely-diced celery or turnip.

  4. You can substitute them with jicima(arrowroot) or potatoes at the last minute.Lotus roots are also good.

  5. tofu.
