    This is kind of a sticky question because there are different definitions, depending on who you are talking to.

    To a botanist, a vegetable is anything that has the nature of, or is produced by, plants.

    However, most people think of vegetables as a plant that is used or cultivated for food for man or domestic animals; as with cabbage, turnip, potato, bean, dandelion, etc.  It is also the edible part of such a plant, as prepared for market or the table.

    Vegetables and fruits are sometimes loosely distinguished by the usual need of cooking... vegetables being cooked while fruits may be eaten raw; but the distinction often fails, as in the case of quinces, barberries, and other fruits, and lettuce, celery, and other vegetables.  Tomatoes if cooked are vegetables, if eaten raw are fruits.

  4. A vegetable is a type of food that is usually full of different vitamins. For instance, a carrot is a veggie, and it is full of vitamin c. spinach is full of fiber. whether or not a tomato is a veggie, is still up for debate(i think it is)

    term originally used for any plant, now the name for many food plants, most of them annuals, and for their edible parts. There is no clear botanical distinction between vegetables and fruits. Most vegetables consist largely of water, making them low in calories. They are excellent sources of fiber, vitamins A and C, potassium, calcium, and iron. Legumes (e.g., dried beans, peas, and lentils) are a good source of complex carbohydrates, have a high protein content, and can be used to some extent as meat substitutes.
