  1. What is in a Mini Moo?

    UHT Grade A- is on the label, meaning Ultra High Temperature sterilization. The milk is subjected to 275 °F for just 2 seconds, and provides killing of spores in milk. UHT milk has a shelf life of 6-9 months. It’s the reason it doesn’t have to be refrigerated.

    24-004- Following the UHT Grade A, This is a five digit manufacturing plant number.

    Grade A Milk-9 ml, (about two tsp.) Grade A is not just a phrase. There actually is a grade B milk, mainly distinguished by level of sanitation. It can be used to make cheeses. There is even a grade C milk, but that’s another subject.

    DATEM is an ingredient that keeps the half-and-half from separating. Though it sounds chemical, it was actually discovered by winemakers who found crystals of it in wine that was bottled ‘before its time’. When they added these natural crystals, or tartar, to breads, and dough, they found it made the dough mix much better. It is a variation of cream of tarter that can be bought in any spice counter.

    Sodium citrate- It keeps the pH or acidity stable. It also helps the cream from separating. Looks and tastes a little like salt, made by fermentation of citric acid (lemon juice). Most lemon-lime sodas use sodium citrate.

    Carrageenan- a thickener produced from dried, baled, and boiled green seaweed has been used for thousands of years as a thickener.

    Tetrasodium pyrophosphate- is also a mixing, thickening ingredient.Considering how many mixing agents are in Mini Moo’s it is surprising you still need to shake it before using it, but you do.

    Also listed on the container is a tiny U in a circle, referred to in the industry as the OU. It means it is kosher. It is a registered trademark of the certifying organization, Orthodox Union. It is followed by a ‘D’ meaning that it contains dairy.

    Mini Moo’s are actually made by WhiteWave foods, subsidiary of Dean Foods,  largest dairy processor and distributor in the world, and licensed as Land o’ Lakes. They are a natural and organic foods company that also makes Silk Soy Milk, and International Delights.

    Dean Foods was a brief internet phenomenon when their Tuscan Milk gallon size was reviewed on Amazon.

    Label says "not labeled for resale" because legallly contents would have to be listed on the little Mini Moo, and there isn't room for that.
