  6. Cooking 101 for porkchops!

When frying, always sear (fry on each side) to seal in the moisture as pork is a white meat and tends to be dry.

    Easy recipe:

I get the thick porkchops (2 or more inches thick).

Pat chops with sage on each side and fry in 1 T oil with chopped garlic on both sides to seal.

As I'm frying, put 1 large sliced onion in and fry that too.

Then pour liquid until it covers the meat; use either chicken broth or cubes of chicken boullion.

Cover and simmer until done (approx. 30 mins to 1 hour depending on the thickness.  You might need to add liquid as it might boil off.

This does two things; it makes liquid to pour over the chops and it keeps them juicy inside.  It should boil down to a thin liquid.

Then serve potatos or dressing on the side with a green salad.

It was one of my father's favorite dinners.
