Example, if I am eating something that says enzymes on the package, what am I eating?

  2. It could be a few things but in my experience, enzymes usually mean animal rennet which is not vegetarian

Actually, scientists are not certain what they are and how they work.  But do know that they help to speed up processes in the human body; they seem to be helpers.  In food they typically help to speed up the process of fermentation or coagulation etc..  Enzymes on ingredient lists are produced in a laboratory. They are vegan.
