What is an ideal day's meal plan for a vegetarian who wants to maintain a healthy lifestyle?

  1. do you eat eggs or dairy?

    Here are some ideas, if you don't eat dairy or egg just replace them with soy products or choose something else.

    Breakfast:

    Whole grain waffle with peanut butter and maple syrup, fruit

    Whole wheat toast with peanut butter and jam, fruit

    Whole wheat toast with one poached egg, fruit

    Whole wheat toast smeared with beans, fruit

    Lunch:

    Soup (progresso has good vegetarian soups, as does Eating Right (at Safeway).

    Sandwich: Peanut butter and jelly, egg salad, cucumber and cheese, cucumber and sprouts, lettuce and tomato.

    Wraps: anything you want, lots of veggies

    Burrito (brown rice and beans of choice)

    Salad

    Chili with fritos or corn bread (hormel makes a vegetarian chili)

    Snacks

    Celery

    pretzels

    Carrots

    yogurt

    seeds (sunflower, pumpkin, pomegranate)

    nuts (peanuts, cashews, pistachios, any you like...)

    Dinner:

    pasta and marinara sauce

    pasta primavera (whatever veggies you like mixed in with a little olive oil)

    burritos

    chili

    salad

    vegetable pot pie (vegweb.com has an excellent recipe)

    veggie burger on one bun with lettuce, tomato, onion

    Soup

    Lentils! (just search vegetarian recipes and you'll find tons)
