  1. I think Cultural Anthropology would be a cool subject.  It would probably be good for someone who wants to be a teacher.

  2. I think a theory class is always good for encouraging different ways of thinking. Intro classes are usually limited in that aspect.

  3. Cultural anthropology would be a good choice, as it'll offer you a broad perspective.  It will also teach you how to think like an anthropologist, which is a useful skill, particularly in professions like medicine and teaching where you deal with many different people.  For a doctor, a course in the anthropology of death and dying might be very interesting.  Chances are, you'll deal with dying people or their grieving family at some point, and that class may help you because you'll know more about how different cultures have dealt with that process.

Intro to archaeology would be more about archaeological fieldwork.  The next to last one would be primate studies, where you'd learn about the other hominids and the chimps and gorillas and orangutans.  History and theory of anthropology would be what it sounds like.  They'd all be interesting, but possibly less useful for non-anthropologists than the other ones, unless you are specifically interested in those things.
