Question:

What is better, farm raised Salmon for sushi or wild?

Almost all the Salmon found in Japenese restaurants is farm raised from what I understand from the owners. I have ordered wild alaskan that has been properly frozen to meet sushi standards and it does not have the fat or the flavor of the farm raised. I think a drawback to the farm raised is the fertilizers, etc. that run off into the fish beds. Does anyone know the best place to order wild Salmon for eating as sushi that has the most flavor?

  1. I prefer the farm raised salmon - better salmon flavor.  Wild caught salmon has less salmon flavor- very bland IMO.  I hear that the wild salmon has more nutrients than the farm raised.

  2. farm raised is safer due to the concerns of mercury lead and other chemcial's found in the water due to polution.

  3. I find that farm raised salmon taste much richer than wild...it is more buttery and smooth tasting on the palate when eaten as sashimi or sushi...

i LOVEE this site for sashimi grade fish...
