  1. that is the process of cleaning up the mortar once the bricks have been laid in place.so as to have a small cup in the mortar between the bricks  


  2. Actually I believe it's called tuck pointing. The object of it is to give the joints a more aesthetic look and to provide the indention from the top of the joint to the bottom of the joint with a groove that permits water/moisture to flow down the side of the joint rather than stand in the joint.  It takes a special tool for hand finish.
