  1. Honestly, if you like rice then you'll like Cajun food. And maybe it's because of my parents' upbringings and the flavors they use in cooking, but Cajun's not spicy at all. Although a lot of Cajun food seems like the same thing reheated, crawfish is amazing and gumbo the next day (after the oil's been removed) is fantastic.

Cajun food is good, most people that I have come across in Louisiana believe that a lot of spices is good, it is if the right spices are used.  Salt, pepper, onions, celery, spices of course, rice, bay leafs, and care and love those that are really good cooks care about the product that they put on your plate from my experience.

  7. Cajun is awesome!!!  Some people think its just hot, but that's not true. There are some hot dishes, but mostly it is a blend of different spices.

    The three basic ingredients of Cajun food are onions, green pepper and garlic. (called the holy trinity of cajun food). Most dishes start with these - you cook them till very soft and then you add everything else.

    Another basic thing is called a "roux" which is flour and oil cooked together it can be a light roux or a dark roux and it is a little tricky to master. It is the beginning of lots and lots of cajun dishes like gumbos and stews.

    If you want to try cooking some cajun dishes, please go to an authentic site - MUST be from Louisiana. Best cajun food in Louisiana is located in the Lafayette area (west of baton rouge) Not New Orleans - that would be Creole Food.

  9. It is the best! Very well seasoned and flavorful..sometimes a little on the hot side...seafood like shrimp, fish (catfish) and crawfish...boudin and andouille sausage, rice, green pepper, onion and celery, tomato, cayenne peppers...Tabasco sauce grits and ham, chicken, okra...

    My own traditional cuisine is a variation of this, Mississippi Gulf Coast cuisine...it is similar...

  10. Cajun food is a fantastic dance for your palette, a fusion of cream, seafood, vegetables and rice.

    Usually the base of cajun foods is the spice seasonings, not really spicy instead it is fragrant. The dishes may consist of sausages (Andouille ), with seafood and vegetables (trinity), usually stewed or braised for the flavours to blend well.

    Excellent cajun dishes: jambalaya, gumbo, crawfish etouffee .

  12. I lived on the Ms. Gulf Coast for 10 yrs. and my boss was cajun. She taught me alot of her traditional recipes. Here are just a few.

    Cajun Hot Dish

      

    4 servings

      

      1 lb. cooked Andouille sausage, cut into 1/4 inch slices

      1/4 c. chopped onion

      1 c. frozen corn

      15 1/2 oz. can hot chili beans

      1 c. V8 juice

      1 Tbsp. paprika

      2 to 3 t. ground cumin

      1/4 t. cayenne pepper, optional

      1 c. uncooked instant rice

      1/2 c. shredded cheddar cheese

    In a large skillet, saute sausage and onion until sausage is lightly browned.  Add corn; cook and stir for 1 minute.  Stir in the beans, V8 juice, paprika, cumin and cayenne.

      

    Bring to a boil.  Reduce heat; simmer, uncovered, for 3 minutes.Stir in rice.  Remove from heat; cover and let stand for 5 minutes for rice to cook.Sprinkle with cheese and serve.

    Cajun Fettuccine

    3 c,. cooked spinach fettuccine

    1/4 lb. butter

    1 tbsp chpd. garlic

    1/4 c. chpd. green onions

    1/4 c. slcd. mushrooms

    1/2 c. diced tomatoes

    1/2 c. diced andouille

    1 c. 50 count shrimp, peeled.

    1/2 c. lump crabmeat

    1/2 c. cooked crawfish tails

    1 oz. dry white wine

    1 tbsp lemon juice

    1 c. heavy whipping cream

    1/4 c. diced red bell pepper

    1/4 lb. chipped cold butter

    1 tbsp chpd parsley

    salt and cracked black pepper to taste

    In a two quart heavy bottom sauce pan, melt butter over med. high heat. Add garlic, green onions, mushrooms, tomatoes and andouille. Saute three to five minutes or until all vegetables are wilted. Add shrimp, crabmeat and crawfish. Cook for an additional ten minutes. Deglaze pan with white wine and lemon juice, and continue cooking until volume of liquid is reduced to one half. Add heavy whipping cream and, stirring constantly, reduce until cream is thick and of a sauce like consistency, approximately five mins. Add diced red bell pepper and chipped butter, two to three pats at a time, swirling pan constantly over burner. Don'tt stir with a spoon, as butter will break down and separate if hot spots develop in the pan. Continue adding butter until all is incorporated. Remove from heat, add parsley and season to taste using salt and pepper. Gently fold in cooked fettuccine and serve. May be chilled and served as a cold pasta salad.

    Spicy Cajun Buffalo Wings

    3 pounds chicken wings-washed and cleaned

    1 bottle spicy barbecue sauce

    2 teaspoons cayenne pepper

    1/4 teaspoon salt

    2 teaspoons black pepper

    1/2 teaspoon minced garlic

    1 teaspoon minced onion flakes

    3 tablespoons Worcestershire sauce

    2 tablespoons Jalapeno sauce

    1 tablespoon Franks Red Hot Original sauce

    1 tablespoon Cajun spice

    In a crockpot put cleaned chicken. In a med. size bowl mix

    the barbecue sauce, and all spices. Pour over wings, stir and heat on LOW for 4 hours.
