  1. Callaloo is a caribbean dish (like stew) made with crab, coconut milk, okra and dasheen (water spinach).  It's really good.

    Paratha-Roti (Buss Up Shut) is Trini.  It's like a flour dumpling that's baked.  Then you mash it up and add a meat filling to it.  The filling is usually curried.


  2. Calaloo - a leafy green vegetable, but often refers to the Trinidadian soup of the same name which is amde with okra, calaloo greens, coconut milk and seafood among other ingredients.

    bus' up shut, is trini (slang?) and this comes from "bust up shirt" because it is basically strips of roti that you eat with curry

    in a roti shell so densely packed that it is literally bursting at the seams, resembling a torn-up shirt.

    There are many places to find Trini-style rotis in Toronto, one that comes to mind is in Kensington----the Roti Factory on Baldwin. In this cheerfully gaudy hole-in-the-wall, you'll find first-rate Trinidadian-style takeout rotis (chickpea flour wraps) spiked with killer homemade hot sauces such as coriander, mango and tamarind. Rotis can be lovingly crammed with eggplants, potatoes, long green beans and unripe plantains.

I'm partial to Jamaican style calalloo that's made similar to American greens but with Caribbean flair   buss up shut it a bread type product using chick pea flour instead of wheat flour(i like them fried like hush puppies)but it can be made in so many different forms. you should give both a try -delicious
