When you achieve the highest level in that field it is called excellence.

so like excellence of drawing would not be to be good at drawing compared to the average person, but to be good at drawing in comparison to those that draw.

It often helps to break down words to figure out what they mean.  Excellence breaks down to "excel" which means:

*to distinguish oneself; "She excelled in math" 1

* to surpass someone or something; to be better or do better than someone or something; to be much better than others 2

So, I think "excellence" has to do with this - going beyond normal, rising above the rest, getting closer to perfection.  This can be in many different areas - morally, academically, etc. Hope that helps you!
