  1. It's a very fine sugar that is ideal for baking. It is a bit more yellow in colour compared to the pure white sugar. I use it for all my cakes, and it works really well.

    But you can always use normal sugar if you haven't got castor sugar to hand.


  2. It is the middle of the three grades of white sugar in terms of fineness.  It is especially useful for baking or any cooking where quick disolving and low chance of grittiness are essential.  

    In most cases, it looks just like normal white sugar, just finer grained.

    The finest grade, called "Icing sugar" in Australia and sometimes in the UK, and "Confectioners sugar" in other places is not to be confused with "Icing mixture", a blend of pure icing sugar (which is very hydroscorbic and tends to clump) and a small proportion of cornflour or other starchy free-flowing agent.

  3. castor/caster sugar - Spelled both "caster" and "castor." The spelling castor sugar used to be the prevailing one, but caster sugar seems to be more usual now, perhaps because it is used by some sugar manufacturers on their packaging.

    UK castor/caster sugar is very finely granulated sugar (finer than U.S. granulated sugar) which allows it to dissolve almost instantly. In the United States, superfine sugar or the new Baker's sugar may be substituted. It is called "berry sugar" in British Columbia.

    Because of its fineness, it dissolves more quickly than regular white sugar, and so is especially useful in meringues and cold liquids. It is not as fine as confectioner’s sugar, which has been crushed mechanically (and generally mixed with a little starch to keep it from clumping).

    If you don’t have any castor sugar on hand, you can make your own by grinding granulated sugar for a couple of minutes in a food processor (this also produces sugar dust, so let it settle for a few moments before opening the food processor).

  6. caster sugar is normal sugar really but it has finer grains so it will dissolve quicker and is not as gritty that's all that i know off!
