    NOUN:

    The roe of a large fish, especially sturgeon, that is salted, seasoned, and eaten as a delicacy or relish.

    ETYMOLOGY:

    Alteration of caviarie (probably from obsolete Italian caviari, pl. of caviaro), or from French caviare both from Turkish havyar, from Persian khvyr; ; akin to khyah, egg, from Middle Persian khyak; see awi- in Indo-European roots

    WORD HISTORY:

    Although caviar might seem to be something quintessentially Russian, the word caviar is not, the native Russian term being ikra. Caviar first came into English in the 16th century, probably by way of French and Italian, which borrowed it from Turkish havyar. The source of the Turkish word is apparently an Iranian dialectal form related to the Persian word for "egg," khyah, and this in turn goes back to the same Indo-European root that gives us the English words egg and oval. This rather exotic etymology is appropriate to a substance that is not to everyone's taste, giving rise to Shakespeare's famous phrase, " 'twas caviary to the general," the general public, that is.

    It is unfortunate how depleted we've caused this fish (and others) to become. Also, I seem to recall something about there being a huge black-market where the roe is taken and the fish just thrown away and wasted?

    This was an excellent question, as it sent me checking on what little I knew, beyond having had the eating experience.....

  13. Salted fish eggs varried in color and size.  They can be cheap or really expensive.  Personally, I like them on a cracker with butter- I have only had the cheap stuff.  

    Funny the things humans decide to eat...  Makes you wonder!

  14. I have just studied that this semester from my Culinary Program in Canada. It was nice to know what is caviar and the quality is very good and very expnsive. ALMAS (from Iran or Russia) is worth 30,000 Pounds (British Pound) and covert that into dollar, that is about $35,000 Canadian Dollars. ALMAS is extremely rare to find where everyou are going.

    The only fishes that carry caviar is: Beluga, Strugeon, and Osetra.
