  1. I guess you ate charqui when you travelled to Ecuador? Charqui (that's the right way to write it) is like beef jerky, it's dried meat and usually it's llama's or alpaca's dried meat. The people in the highlands (and ancient incas) used to salt and dry meat during the winter and therefore dehydrate it in order for the meat to last months.
