What is considered local cuisine in Colorado?

More specifically, the Boulder to Denver area. For instance I'm from the gulf coast, so we mostly specialize in fresh seafood. Can anyone answer this for me? I'm very curious.

i would say anything with meat? no seafood

No seafood, but try a buffalo burger. The meat is a little dry but it's delicious and only available in Colorado, Arizona, and Wyoming

The Denver area is really getting quite culturally advanced and we have some amazing restaurants serving everything.  I would say regional cuisine is pretty heavy into red meat as it's cattle country.  Colorado lamb and peaches are very highly rated.  Buffalo is pretty big here (and yummy) as are other game meats like elk and venison, you'll see quail at a lot of game oriented places too.  The Rocky Mountain Oysters everyone refers to are a Western delicacy to be sure and everyone has to try them, but they are not oysters by any stretch.  On the Boulder end of the area you'll find a lot of organic and natural foods.  We're not known for BBQ, most meat is prepared pretty simply to focus on the quality of the meat.   Southwest cuisine with a Mexican focus is also very big.  We eat a lot of Mexican food and have a large Mexican population.

Rocky Mountain Oysters and not really anything else I remember visiting and not the best culinary city in the world.

Southwestern style Mexican food is really big here and delicious. The green chile is great. Don't go to chains (for anything), find a local joint, there is one on most any street.

Denver is definitely a beef town, probably a dozen high end steak houses and they are all pretty good, I like Capitol Grill or Del Friscos the best. Boulder is a tofu town, don't know where to get that.
