What is the difference between course sandpaper and just sandpaper?

Course = rough the more course sandpaper is, the bigger the grains of sand that is used in the paper.

Coarse sandpaper is coarse. That's all.

Simply put, coarse sandpaper will leave a rough surface on whatever you are sanding.  But it removes tough surface coats, or levels uneven wood.

Re-sanding it with a smaller "grit" sandpaper will provide a smooth finish for your project and prepare it for paint, stain, or color.

i consider anything under 100 to be coarse...

It is grit, 60 grit is very course, average of 60 bumps/sharp edges per square inch.  140 grit would be considered medium by some.

you mean coarse not course. coarse is the rough type. sandpaper is  rated in the grit content such as 40 or 100. the higher the number the finer the grit.
