  1. Well, it depends on what you mean by sustainability.  Sustainability generally deals with how humans use resources in a way that won't deplete them unnecessarily.

Ecology is the branch of biology that deals with how organisms interact with their environment, use resources, and all their biotic and abiotic relationships.

Evolutionary biology is th branch that deals with how species change over longer periods of time.  Evolutionary biology deals heavily with genetics.

But, it sounds like you might be most interested in Conservation Biology.  However, as an undergraduate, it doesn't really matter what your major is.  Being a regular biology major will give you the essential science needed to pursue further education where you would specialize.

  2. Evolutionary biology is a field of biology that deals with of the origin of species from a common decent, the way it evolved, multiply and diversified over a period of time.  Some topics are natural selection, adaptations, genetic drift, gene flow and speciation.  Ecology on the other hand is the study of relationships of living organisms and there environment.  How they interact, reproduce and the problems that any problems that arise while living in that environment.

Go talk with your adviser and get there a advice on what route you should take for your future.   And make sure you really do your research to see if you really want to go into that field of study.
